Buna (Ethiopian Coffee)

·         16 Teaspoons of Arabica coffee

·         One litter of water

·         ½ Teaspoon of black cardamom seeds

·         Little amount of sugar to taste

PREPARATION

PREPARATION

 

Ø  To begin, pour water on the coffee pot and put it in flame, then wait for the water to boil, when you notice that the water starts boiling, add 3 spoons of ground light to medium roasted Arabica coffee, on a medium-size pot and let it boil again for 10-15 minutes, over a low flame. Then, Add cardamom and cloves, after a few minutes remove it from the heat and set it aside for a while to let the grounded coffee beans to settle down. Finally, filter and transfer the steaming coffee into a thermos flask in order to keep the coffee hotter for a certain amount of time

PREPARATION

In the traditional way of making Turkish coffee, you must never stir the coffee, while it’s on the heat. After a few minutes, you will see tiny bubbles that start forming on the surface of your coffee, slowly take the bubbles with the spoon and pour them inside the coffee cup and keep it aside. If the coffee starts to boil you must remove it immediately from the heat, otherwise, if it continues to boil, the taste of the coffee will turn bitter. Then slowly pour the coffee in the cup, to avoid destroying the white foam, pouring slowly will make the white foam stay on the top of your coffee and won't disappear. After pouring the coffee you must not stir it, you must wait until the coffee parts to go down in the cup, and then it’s ready to drink

 

Indonesia

Coffee was first introduced to Indonesia during its colonial days. Now Indonesia is one of the major players in the world coffee market, they are the fourth largest producer coffee in the world with an export ratio of 25% Arabica and 75% Robusta, Also Indonesia is very famous because of their kopi Luwak. The Island of Java in Indonesia is very known when it comes to their coffee culture, The Java is extremely valuable, because of their legendary variety named Luwak, which is known to be one of the most expensive coffee in the world. This is the way how the civet cat procedures the coffee beans. All coffee begins with a white flower then, they developed into a green cherries, once ripped they turn red. And now ready for consumption, the civet cat’s feast on the ripe coffee cherries. After eating the cherries, the fermentation occurs inside the civet cats digestive system, it is believed that the animals digestive system reduce the bitterness of the coffee and gives a special aroma to it. Next, the coffee beans are defecated after 24 hours. then the coffee farmers will collect it and washed them carefully then they will dry it under the sun, after drying the beans will be baked to be the civet cat coffee

INGREDIENTS

·         4 Teaspoons of honey

·         Water

·         1 egg yolk

·         1 teaspoon of Coffee

·         3 teaspoons of palm sugar

 

PREPARATION

 

Ø  To begin, add 1 teaspoon of coffee, one egg yolk and 3 teaspoons of palm sugar to a cup then stir them well to achieve the creamy mixture. Next, fill it with boiling water, and to sweeten add 4 teaspoons of honey and stir it again continuously to blend the taste. Then it’s ready to serve
